KATHIRIKAI KARA CURRY (BRINJAL SPICY CURRY)



INGREDIENTS

Brinjal – 250 Gms
Onion – 1
Tomato – 1
Garlic – 7 to 8 pods
Mustard seeds – ¼ tsp
Cumin – ½ tsp
Sambar powder – 1 ½ tsp
Turmeric powder – ¼ tsp
Oil – 1 tbs
Curry leaves – few
Coriander leaves - little
Salt to taste

METHOD

Cut the brinjal lengthwise into thin strips, cut tomato into fine pieces.
Grind the onion, garlic, ¼ tsp cumin and little coriander leaves into a rough paste.
Heat oil in a pan, add the mustard seed, cumin and curry leaves.
Now add the onion paste and sauté for 30 sec.
Add the tomato and cook for a min.
Add sambar powder and turmeric powder and sauté.
Now add the brinjal, and salt and sprinkle some water.
Close the pan with a lid and cook in low fire.
When the brinjal is cooked, garnish with coriander leaves and serve.
