CARROT RICE




INGREDIENTS

Cooked rice – 1 cup
Grated carrots – ¾ cup
Onion- 1
Green chillies – 2
Curry leaves – few
Coriander leaves – little
Mustard seeds – ½ tsp
Channa dal – 1 tsp
Asafoetida – a pinch
Garam masala – ½ tsp
Oil – 1 tbs
Coconut oil – 1 tsp
Salt to taste

METHOD

Heat oil in a pan, add mustard seeds and channa dal
Add onions, curry leaves, green chillies, asafoetida and sauté for a min
Add the grated carrot, salt, garam masala and cook till the carrot is done
Now add the cooked rice and 1 tsp coconut oil and mix well
Garnish with coriander leaves and serve.

NOTE

Coconut oil is added to enhance taste and aroma.
