EGG ROLL (EGG FRANKIE)


INGREDIENTS

Maida - 1 cup
Eggs – 2
Onion – 1
Potatoes – 2
Carrot – 1
Chilly powder – ½ tsp
Lemon – 1
Coriander leaves – little
Oil - 2tbs
Salt to taste.

METHOD

Take maida, add salt and water and make it to dough to make chapathis
Beat the eggs, add little salt and keep it separately.
Cut the potatoes into small pieces.
Heat 1tbs oil in a pan, add potatoes, salt and chilly powder with little water and sauté till the potatoes are well cooked.
Grate the carrot in a grater and cut the coriander leaves.
Cut the onions finely.
Now make the maida dough into normal sized chapathis
Heat tawa and cook the chapattis and keep aside.
Now in the tawa add a little oil and spread the beaten egg into a thin omelette.
Put a chapatti on top of it and cook well on both sides
Now lay this chapathi on a butter paper or a tissue paper.
Fill the centre of the chapathi with potato curry, onions, carrots, coriander leaves and a little lime juice.
Roll the chapathi in such a way that half the roll is outside the butter paper.

TIPS

You can make different fillings with paneer or chicken as per your wish
