BINDI SABJI (VENDAKKAI CURRY)



INGREDIENTS

Bindi (ladies finger) – 250 gms
Onion – 1
Mustard seeds – ½ tsp
Curry leaves – 5 to 6
Chilly powder – ¾ tsp
Turmeric powder – ¼ tsp
Jeera powder – ¼ tsp
Garlic powder – ½ tsp or garlic 4 to 5 cloves 
Oil – 1tbs
Salt to taste

METHOD

Cut onion finely and bindi into small pieces
Heat oil in a pan and add mustard seeds and curry leaves
Add crushed garlic or garlic powder and add onions.
Saute the onion till brown
When it is cooked add bindi, chilly powder, turmeric powder and jeera powder and saute.
Cook the bindi in low flame till the bindi's are well cooked and is almost crispy.
Now add the salt. (salt should be added in the last, the sabji will become sticky if salt is added in the beginning)
Remove from stove

Serving Tip:
The sabji goes well with sambar rice, rasam rice and even chapathi
