RED PUMPKIN SWEET PORRIYAL




INGREDIENTS

Red pumpkin – 2 slices
Moong dal – ½ cup
Sambar powder – ½ tsp
Turmeric powder – ¼ tsp
Salt – a pinch
Sugar – 2 tbs
Grated coconut – 2 tbs
Oil – 1 tsp
Mustard seeds – ½ tsp
Uradh dal – ½ tsp

METHOD

Cut the pumpkin into small pieces
Cook moong dal in cooker
In a pan add a cup of water, pumpkin, salt, turmeric powder, sambar powder and cook till the pumpkin is very soft.
Mash the pumpkin a little bit and add the sugar
Allow to boil till water from the sugar is dry.
Now add the grated coconut and remove from stove
Heat oil in pan, add mustard seeds and uradh dal and add it to the pumpkin.


SERVING TIP

This is a good side dish for chapatti as well as sambar and rasam rice.
