COCONUT MILK RICE


INGREDIENTS

Basmati rice – 1 cup
Onion – 1
Grated coconut – 1 cup
Green chillies – 2
Green peas (optional) – ½ cup
Capsicum – 1/2
Coriander leaves – little
Oil – 1 tbs
Cloves – 2
Cinnamon stick – 1
Cardamom - 2
Garam masala – ½ tsp
Salt to taste

METHOD

Soak the rice in water for 20 mins.
Cut the onion in juvellions, chillies lengthwise and capsicum into small pieces.
Grind 11/2 cup of water and coconut in a mixer and filter the milk
Heat oil in a cooker and add cinnamon, cardamom and cloves.
Now add the onions, green chillies and sauté for a min
Add the rice, peas, salt, garam masala and the coconut milk.
Close the cooker and after a whistle, sim the stove for 5 mins
Switch off the stove and let the pressure come down
Garnish with coriander leaves and capsicum and serve.

SERVING TIP

Vegetable gravy, chicken or mutton gravy goes good as a side dish
